We dream of a city where urban life thrives in harmony with the planet

A city where nature can grow in our backyards and isn't paying the price for our industry and infrastructure. We dream of making locally grown mushrooms accessible to everyone and making mushroom cultivation a common practise. 

We redefine the future of farming

We insist that farming can thrive in the heart of the city, far from traditional fields. We, at Bylandbruget Baggaarden,  upcycle coffee grounds from local cafés and transform them into gourmet mushrooms. We do this because we believe circular and sustainable food systems are the future.

Mushrooms are best when grown and enjoyed together 

We believe in a future where food is grown collectively. We are inspired by the way mycelium forms networks and symbiosis with other living organisms. This is reflected in how we collaborate with local cafés and restaurants to collect coffee grounds, but more importantly, in our passion for sharing the art of growing mushrooms. 

... Because when did we forget how to grow our own food? 

CIRKULAR URBAN FARM

We collect coffee grounds and grow mushrooms on the nutrient-rich waste. You enjoy the mushrooms, and the remaining substrate is given to local farms—where the mycelium in the substrate helps break down organic matter in the soil, which plants, and ultimately we, can absorb.

ABOUT US

We, Maja, Gabriel, and Valdemar make up Bylandbruget Baggaarden. We miss nature and rooted in this urban longing for farming we started growing mushrooms in our wardrobe last year.

Since it has grown into an almost mycelial network of dreams to create a mushroom farm in the heart of the city, nourished by the otherwise wasted coffee grounds of Copenhagens local cafés and restaurants.
